Job Description

Job Title:       Deli Cook

Department:  Deli

Reports To:    Deli Supervisor and/or Deli Manager

Job Summary – The position will be responsible for in-store activities within the Department, including providing assistance to the Department Supervisor and/or Manager by maintaining, preparing and presenting meals. The position will be responsible for providing quality customer service in a safe and healthy environment. Position must observe all store and company policies; while maintaining a neat, well-groomed personal appearance.

Job Duties

  • Provide all customers with prompt, courteous and friendly service.
  • Have basic knowledge of deli products and different types of merchandise available with the ability to sell and offer suggestions to customers to promote department sales.
  • Prepare various equipment and ingredients for daily use.
  • Prep and prepare various foods and ingredients for cooking or serving.
  •  Cook Caribbean and international dishes in volume quantities.
  • Observe and test foods to ensure they have been cooked properly.
  • Regulate temperature of oven, broiler, grill, and roaster.
  •  Participate in menu and recipe planning and costing control.
  • Monitor and assist with maintaining the flow of the food lines.
  • Code-date and rotate all merchandise to ensure quality and freshness.
  • Follow all department inventory control procedures.
  • Follow company procedures to ensure work areas are clean at all times. Wash and clean utensils, equipment, walls, floors and fixtures.
  • Always show interest and willingness to learn the industry.

Requirements

  • Ability to read, comprehend, write and speak English.
  • Ability to perform basic Math.
  • Basic computer competency preferred.
  • Ability to follow instructions.
  • Ability to work independently and be self-motivated.
  • Exhibit attention to detail and commitment.
  • Positive interpersonal skills.
  • Ability to work in largely diverse teams.
  • Ability to work varied hours/days as store dictates.
  • Ability to lift up to 50lbs and to stand for extended periods of time.
  • Ability to timely multitask while working in a fast-paced environment.
  • Ability to endure hot and cold temperatures.
  • 5 years kitchen experience.
  • 1-2 years relevant experience as a cook. (volume cooking preferred)
  • Advanced knife cutting skills required.
  • Company will provide certification to complete the Basic Food & Hygiene certification.

 Job Function – Company Standards: The essential duties and responsibilities of this position include but are not limited to the following.

  • Greet, Offer to Assist and Thank (GOT) all customers in a prompt, courteous and friendly manner anywhere in the store.
  •  Effectively handle customer complaints and contact supervisor or manager if necessary.

  • Observe and report to shift as scheduled or assigned by Department Manager.
  •  Acknowledge and follow all department, store and company policies and procedures.

  • Achieve the highest associate morale in the industry by working in a style that demonstrates good work ethic by being Respectful, Supportive, and Totally Team Oriented.
  • Practice the “Clean as you go” and proper sanitation procedures.
  • Ensure sales and work area are swept and mopped clean, orderly, and free from safety hazards, report hazards to management.
  • Able to operate, clean and properly store department equipment and tools.
  • Notify Management of associate theft, customer shoplifting, unauthorized markdowns, unauthorized sampling, or property damage/defacement.
  • Exercise proper safety practices when lifting or moving product or using equipment.
  • Perform any other duties assigned by the Department Supervisor and/or Manager.
  • Play an active role in the company’s commitment to care, quality, value, and service while upholding its vision, mission, and culture points.

Job Function-Position Standards

  • Exercise safe food handling practices.
  • Must follow uniform policy (aprons, company hat or hairnet and proper use of gloves).
  • Maintain the cooler, freezer, equipment, and work area to the sanitation standards of the company. Perform deep cleaning as required or when instructed by Department Supervisor and/or Manager.
  • Stock displays and keep all products rotated in accordance with company policy and product code dates and always make use of the oldest products first FIFO (first in, first out).
  • Fill and build displays in an appealing manner to increase sales.
  • Offer suggestive selling by recommending products and maintaining stock levels for sales.
  • Assist in checking and verifying department receiving when required.
  • Follow company procedures for receiving, unloading, and putting away loads from delivery and store products in designated areas to ensure product quality. 
  • Ability to cook Caribbean, local and international dishes.
  • Season and cook foods according to recipes or personal judgment and experience.
  • Bake, roast, broil and steam meats, fish, vegetables, and other foods.
  • Inspect food preparation and serving areas to ensure observance of safe, sanitary food handling practices according to DEH.
  • Estimate expected food consumption, communicate with manager on the requisition or purchasing of supplies or procure food from storage.
  • Consult with supervisory staff to plan menus & recipes, taking into consideration factors such as cost and special events.
  • Wash, peel, and/ or cut various foods to prepare for cooking or serving.
  • Butcher, clean and season poultry, fish, meat, and shellfish to prepare for cooking or serving.
  • Stir and fill soups and sauces.
  • Prepare a variety of foods according to customers’ orders or managers’ instructions, following approved procedures.
  • Monitor food levels and demands of the front line.
  • Assist Deli associates with various tasks as needed.
  • Rework products from other departments in a timely manner.
  • Stock and maintain sales floor and showcase; ensure products are priced accurately.
  • Package, label and merchandize products.
  • Recognize and react to customers’ demand. Taking orders from customers, custom food orders, and platter orders etc.
  • Prepare and present quality products by company specifications and instructions.
  • Properly load and unload ovens, using recipes and proper temperatures and duration to make goods in accordance to department procedures.
  • Place food servings on pans & trays as instructed.
  • Stock, replenish and maintain service stations with items such as soup cups, food trays, containers, utensils, coffee cups etc.
  • Service customers including slicing, cutting, weighing, packing, and pricing merchandise.
  • Prepare beverages area such as coffee, tea, and patties where applicable.
  • Remove trays and stack pans for return to the sinks for cleaning.
  • Clean dishes, kitchen, food preparation equipment, and utensils.
  • Monitor and maintain disposal logs.
  • Handle damaged and spoiled products according to company policy and assist in controlling the level of damaged goods.
  • Monitor cooler and display area temperature to ensure product quality, report refrigeration failure immediately.
  • Always ensure a safe work environment throughout the store.
  • Remove trash and clean department garbage containers in accordance with company policy.
